Outdated example

The first command, docker run --name blazegraph --rm -d -p 8889:8080 islandora/blazegraph:3.1.1, in the first example in README.md is outdated. The 3.1.1 tag is no longer available (https://hub.docker.com/r/islandora/blazegraph/tags?name=3.1.1). Should the example be updated? Is blazegraph still being considered?

so far we seems to be converging to use oxygraph. README overall in a sad state and should be reworked to reflect recent developments etc.
